So, I was pretty impressed with my random soup tonight and had to share. I decided to turn all my leftovers plus whatever I could find in the pantry into soup.
I had some leftover rotisserie chicken, a cup of raw broccoli, half a green pepper, 1/2 cup of chopped onion, some carrots, and some leftover rosemary roasted red potatoes in the fridge. To that I added, chicken broth, a can of diced tomatoes, tomato paste, white cannellini beans, two cups of noodles, and a can of mushrooms from the pantry. I topped the mixture with seasoned salt, oregano, basil, Parmesan cheese, and garlic powder.
Then, I pulled out some stale French bread and turned it into homemade croutons by mixing bread cubes with melted butter and most of the same seasonings above, then putting them under the broiler.
Mmm. Mmm. I have never made homemade croutons, but I have to recommend them. They are easy and very delicious and a great use of crusty bread! I hope I remember to make this again!

Well, they're all frozen by now anyway. I appear to be nesting. Remind me to make it when you come out.
Will you be nesting for 4 weeks? Yikes!
Hopefully not, since it is only 3 weeks until my due date. But I did take down all my Christmas decorations except the tree last night, pack my hospital bag, load it, the diaper bag, and the carseat in my car, and make the house generally spotless. Not sleeping well, but getting lots done.
