You'll Be "Green" With Jealousy...

Something came over me when I was at the grocery yesterday. As I wandered through the produce department looking for inspiration and vegetable sales, I happened upon all kinds of fresh greens for 50 cents a bunch and a 1# bag of Collard greens marked down. Since I had been reading about the wonderful nutritional qualities of greens a day or two earlier, I picked up the bag of collard greens (1# is a lot of greens, I discovered after I got home). Looking at the price, I decided to mix the prewashed prechopped collards with some other greens. So I picked up some really curly greens (kale, I think) and some mustard greens. I have never even seen these in store before. Have I missed them, or were they added after I read the article? I don't know!

When I got home, I realized I didn't know how to cook greens. What was I going to do with all these fresh greens and only two of us to eat them? The internet is great! I googled recipes and found one I thought I could fix in the time I had. After much washing (very curly greens hold a LOT of fine sand!), course chopping, blanching for 2 minutes in my big soup pot, plunging quickly into ice water (the greens, not me!), and sauteing 8 cloves of garlic and 1 cup of onion, chopping and toasting pecans, and mixing and warming it all with a little oil and vinegar, I presented a LARGE skillet FULL of greens to Dad for supper! Gracious, as always, he ate them, and even took seconds. I had about 2 quarts left over. (Anybody want any greens. They're a great source of antioxidants and much more!) When Emily Jane came over today, I offered her lunch. She had no idea! She bravely agreed to try the unusual offering at lunch. (Anything to please her new mother-in-law!) Let's just say, she won't be rushing to the grocery before the sale ends!

Tracy is the one who inspired me to try cooking mixed greens with very strange names (and she probably doesn't even know it!). Thanks, Tracy. I feel very healthy (and a little bit Southern)!

Emily said that she liked them ok once she figured out that you don't have to douse them in vinegar first.
