Okay, so I rarely post recipes here, but I just have to share this yummy one for the crock pot. Even Jackson loved it. He bypassed the garlic cheddar biscuits I made to have more stew (and he adores biscuits). Please keep in mind that it does have a little "bite" to it, but you can adjust the seasons, as desired. (Plus, the "bite" wasn't any deterrent to the one-year-old, so come on, you can handle it!) ((BTW, I love parentheses!))
Green Chile and Pork Stew
1.5 lb. pork boneless loin, cut into cubes
2 4-oz. cans whole green chilis, drained and cut into strips
20-oz. jar thick-and-chunky salsa (I used Pace picante sauce, half medium and half mild)
15-oz. can whole kernel corn, drained
15-oz. can garbanzo beans, rinsed and drained
1 medium onion, chopped (1/2 cup)
1 cup chicken broth
3 tsp. chili powder
3 tsp dried cilantro leaves, if desired (not my favorite spice - I left it out)
2 tsp. sugar
1. Mix all ingredients in slow cooker.
2. Cover and cook on low 6-7 hours, or until pork is tender.
That's it. The most time consuming part of the whole thing was cubing and trimming the pork (Would the meat department of the grocery store do this for you? Anyone know?). Again, let me stress the yummy-ness of this easy meal! Enjoy!

Perfect timing! I have recently been desiring a new crock recipe. Although I'm not SUPER into spiceyness, I bet I could handle this, or adjust as needed. Kyle will love it! Thanks (if I can get HIM to cube and trim the pork, this will be the easiest crock recipe I have!).
We made it tonight, and served it over Parmesan couscous. Yum! 4 Thumbs Up from the Wilsons!
